Mostly blended into Cabernet Sauvignon and Merlot to give them a perfumed lift
Cabernet Franc is the secret ingredient to Bordeaux-style wines. Even when a tiny amount is blended in, Cabernet Franc can lift the aromas of Cabernet Sauvignon, and give strength and longevity to the predominantly Merlot based wines of Saint-Emilion and Pomerol.
Alone, Cabernet Franc is a strongly perfumed wine with a wide range of scents. Earth, wood, herbs and flowers are not uncommon and sometimes chocolate and dark fruit can be coaxed out. Some great single varietal examples can be found in South Africa, the Loire, and increasingly in New York.
Perfumed, and strong, without a touch of Cabernet Franc, Cabernet Sauvignon just wouldn't be as attractive.
