The Varietal:
Cabernet Sauvignon is considered the "King of Red Wine". Why? It is the key ingredient in the famous wines of Bordeaux, endowing the wine with flavor and longevity. Cab's tiny, thick skinned berries pack a ton of flavor and the tannins from a Cabernet give structure and long life to wines it is used in. Cabernet Sauvignon tends to be a bit austere when grown in Bordeaux however, so it is often paired with a bit of Merlot and Cabernet Franc added to help round out the flavors.
Winemakers everywhere, wanting to emulate Bordeaux, planted Cabernet Sauvignon wherever they went and Cabernet was happy to travel. This grape feels right at home in just about any terrain and climate, thriving in both the cool regions of Europe and the hot valleys of California.
Its Character
Cabernet picks up flavor from its terroir. Cooler climates, like France, give it a green, minty edge while warmer areas (like Australia & California) draw out chocolate and blackberry/currant flavors. Well-made/reserve Cabs age wonderfully, and with time can develop intriguing flavors such as tobacco, leather, and cedar.
